I’m Maribel Corcho, the most liberal, old-fashioned person you will ever meet. I was born in Jamaica and I am 1 of 13 kids. Fun fact: I am truly a middle child. Not only do I have 6 older siblings and 6 younger, ones but I am also in the middle between 6 girls and 6 boys.
I grew up with food being the focal point of every get together; so when the opportunity came up to open a restaurant that would be reminiscent of the community meeting places I grew up with, I jumped on it. Unfortunately, life got in the way, so it took 12 years to become a reality. When we moved over 200km from Tottenham to Aylmer, we decided that it was time to bring the idea to life.
We served our first meal at Taste of the Caribbean in Aylmer on January 21st of this year, and it’s been amazing. The community has been so welcoming, and I absolutely love hearing that we’ve added something to the area by giving people a chance to try new flavours that they may not have had the opportunity to try otherwise.
